My Mum's Meatloaf

My mum gave me this recipe a few months ago and I want to say that it's been in the family for years and it's a childhood favourite! Ok That's what I think and therefore it's what I believe. We can leave it at that!

So, I am sharing with you the best ever meatloaf recipe, ever so moist and delicious, and fussy eaters, NO PROBLEMS!

Lamb meatloaf.
1 Kg of ground minced Lamb. (I like to get the leanest possible.)
2 Cups of fresh Wholegrain breadcrumbs. (white is just fine! Don't be too stressed)
1 small Brown onion chopped finely (food processor is just fine)
1 large carrot or 2 small ones grated ( I just use the food processor again, lets face it I don't need extra washing up!)
4 tablespoons of tomato ketchup sauce
2 eggs lightly beaten (processor again for me)
1/4 of regular BBQ sauce reserved for later.


Really it's very easy from here. Because I use a small 'Slenda Blenda' it comes with an attachment that has a blade processing bowl, I start with the onion, onto the carrot, onto the bread slices (about 4 thickcut crusts and all) and then onto the 2 eggs. All in the one small bowl. Right now set the oven to between 180 or 170 fanforced.

Put everything into a large bowl and with clean hands mix till well combined. Add salt and pepper if you want I don't I don't think that it needs it. I would use a large Bread tin or loaf tin, in my case I am using the PYREX version, it's delightful so easy to clean.

Place all the meatloaf mix into the loaf tin I like to mold mine a little and tuck in the sides for a dome look. Cook in the slow oven for 1 hour and then take from the oven. With oven mitts on drain any extra fat from the loaf tin. Spread the 1/4 cup of BBQ sauce over the top of the loaf and return to the oven for another half and hour. When finished I like to let it sit for 5 to 10 minutes. Serve with vegetables and mash. We like extra BBQ sauce as well. Tonight as you can see the vegetables consisted of peas glorious peas. The working mother's excuse for a Sunday night 'I don't feel like cooking'.

This recipe can be halved it's so easy to do. I make the larger version so we can have slices on sandwiches for lunch the next day. I love this meal it is so quick to prepare and walk away from, it gives me so much more time to spend watching a lazy afternoon sunset, while I hang out the washing, listening to my babies playing in the sandpit.
