Lemon Delicious

We had a typical Sunday night feeling to our public holiday yesterday....I didn't feel like cooking at all I was so relaxed so Mr S made ham, tomato, cheese Toasties in the oven and I whipped up a lemon Delicious. It was the perfect meal, not quite full with Ham and Cheese we all sat down to steaming pots of yummieness. The photo doesn't really do it justice, I wanted to get them out and take a magazine shot, however we just couldn't wait. So a quick snap is all you get. This self saucing pudding is really something to smile about.

3tbsp of real butter, don't skimp with marg, plus extra for greasing the pots.
1 1/2 cups of caster sugar
3 eggs separated
3 tbsp of self-raising flour sifted
1 1/2 cups of milk
Juice and zest of 1 1/2 lemons, add the other half if you really like it tangy.
Hot water

1. Preheat the oven to 180c or 160c if fan forced and butter the pots. Beat butter and sugar to pale and fluffy, then mix in the egg yolks. Add flour and milk in alternating lots, mixing between additions to make a smooth batter.
2. Clean beater thoroughly. In other mixing bowl, beat eggwhites until stiff peaks form. Fold into batter, add lemon juice and zest and stir to combine. Pour into pots, teacups or even a 1 litre baking dish.
3. Place in a baking pan and pour in Hot water to come half way up the sides of pots. Bake for 30 minutes for individual pots and up to 1 hour for a large dish. The pudding should be set and brown on top. Carefully remove from the water bath and serve.
